vanilla yogurt, poured over a bowl of blackberries. Dessert! Also you can use blackberries in any recipe using any berry.

Blackberry Mountain Pie

* 1 stick unsalted butter
* 1 cup white sugar
* 1 cup plain flour
* 3/4 cup milk
* 1 1/2 teaspoon baking powder
* pinch salt
* 2 heaping cups fresh blackberries

# Heat oven to 350 degrees
# Melt 1 stick butter in baking dish (e.g., 2 or 3 quart pyrex baking dish) - place dish with butter in oven while the oven is preheating to melt the butter.
# In a separate bowl, mix the sugar, flour, milk, baking powder and salt with a spoon.
# Add sugar/flour mixture to melted butter, stir to mix well.
# Add fruit, stir to mix well.
# Bake for 45-60 min at 350 degrees (check after 45 min, bake until top begins to brown and the mixture has set)

Ingredients:

4 cups unsweetened blackberries, thawed if frozen
1 Tbs. all purpose flour
3/4 cup sugar
1 tsp. lemon zest, grated
1 sheet frozen puff pastry


Instructions:


Preheat oven to 375°F. Combine blackberries, flour, sugar and lemon zest in a shallow baking dish and toss. Arrange puff pastry over blackberries, trimming edges. Bake 35 minutes or until top is golden and juice is bubbling.

Blackberry Cobbler

3 C blackberries
1 C flour
1 C sugar
1 egg
1/4 C plus 2 T butter, melted

Put blackberries in 10 X 6 X 2 inch baking dish.

Combine flour, sugar, & egg until mixture resembles coarse meal. Spread over blackberries. Drizzle melted butter over topping.

Bake at 375 for 30 minutes. Serve warm alone or with a scoop of ice cream or whipped cream.

May substitute any fruit.
