Chocolate creation contest rules?!

Question: We are having a chocolate dessert contest as a fund raiser. I need ideas for rules. We are having different categories: best brownie, best cake, best candy. We are also having a children's division. People will pay to taste test the samples and place their 'coin' in the bucket of the one they believe is the best. So, each contestant must have 120 individual 1x2 inch pieces to serve them. What else do we need to stipulate? Actual bakeries will also showcase their works of art and those will be given away by a secret auction. It's free publicity for them and good for us, too. All contestants must be amatuers.
