Try some Thai Drunken Noodles. You can throw some veggies and tofu in it. It requires quite a few ingredients, but its worth the work.

I'm going to the church for fried catfish, french fries, beans, cole slaw and dessert. The Knights of Columbus do this every Friday night during lent.

fish, macaroni and cheese, just so that you get your protein. When I make mac and cheese, I use Tex Mex, grated cheddar and parmesan on top in a thin layer. It browns beautifully and tastes good. To the mac and cheese, to make it more like a casserole , add whatever veggies you like and you have a complete meal. Fish can be made above average depending on how you fix it. I use a bit of cornmeal {for the crunch}, parmesan and cajun spice. Mix it well, add fish and put in a baking pan on 400 for 20 min. Turn part way through so that it gets crunchy. It's tasty. You can add whatever spice you like. I love garlic.
vegetarian pizza
Make a Mexican frittata
Ingredients:
1 teaspoon olive oil
12 ounces red potatoes cut in 1 inch cubes
6 large eggs
1 jar (11 ounce size) salsa
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup shredded cheddar cheese
1 medium tomato
Directions:
Preheat oven to 425 degrees. In a non stick 10 inch skillet with oven safe handle heat olive oil. Add potatoes and cook covered until potatoes are cooked and golden brown.
In a medium bowl with wire whisk or fork beat eggs with 1/4 cup salsa: chopped if necessary, salt and pepper. Stir in cheese. Set aside.
Dice tomato and stir in to remaining salsa. Stir egg mixture into potatoes in skillet and cook over medium heat covered for 3 minutes or until eggs begin to set.
Remove cover and place skillet in oven. Bake 4 to 6 minutes: until frittata is set. Cut into wedges and serve with tomato mixture.
This recipe makes 4 servings or 2 generous servings
Morningstar Spicy Chicken Patty sandwhich. It is really good!
FYI Morningstar is like Boca, it is tofu or grains with a kick! No meat.
