What is the deal with eating rare pork?!


Question: I went out to eat at this nice restaurant and had their tasting menu. One of the entrees was pork tenderloin. When I cut into it, it was pink in the middle. Now this is fine for steak, but pork? I remember when eating raw pork would give you worms or worse. Why is it ok now to eat raw pork?

that was actually cooked to perfection. it wasn't raw... all because it's pink doesn't mean it's raw. It is safe to eat.
the internal temp has to be 160 degrees. If it's less than that the harmful bacteria can still be in the meat.

I don't think it is ok..even now. Maybe the restaurant had not cooked it really well.

any meat should be fully cooked, we cant trust what is put in the shops for us to buy any more.

it depends on how it was cooked if it was done in a smoker it would have a pink center to it however if they cooked it in the oven I personally wouldn't eat it cause Of worms or another Bactria. however if you were in a very trendy restaurant then they tend to think it elegant to eat things that are slightly raw.

I cook pork all the time, & it should never have any pink in it. Sound as though it may have been slightly undercooked. But so long as there was no runny blood you should be o.k.

That's not recommended, you can get brain worms and brain bugs from uncooked or undercooked pork. No, don't eat raw pork. If you are in doubt whether your pork is cooked throughly use a quick read thermometer, the correct temp for pork will be printed on the dial.

pink is fine for pork tenderloin anything else would be dry ....now rare is not that good of an idea

It was probably undercooked. as far as i know pork is one thing that should ALWAYS be cooked completely.

In the past there was a huge risk of getting parasitic infections from pork - trichinosis. It can also come from undercooked game. This is not a big risk in most industrialized nations now but you should use care in third world countries. I eat my pork rare in the US.

It used to be that pork contained cysts of the parasites Taenia and Trichinella. Improved hyegine in farming (factory farms) and antihelmenthic medications have decreased the incidence of these parasitic infestations. However, I'd still like my pork well done just to make sure.
