What are good vegetable dishes besides pasta?:??!

How about taboulleh or cous cous? You can add loads of different veggies to both

Tofu burgers
Imitation chicken (which is tofu, but tastes like chicken) grilled with lemon and pepper
Peanut butter and jelly
Chilli with tofu and/or extra beans
Grilled aspragus with lemon
Home-made vegtable soup, store bought has beef stock in it.

Broccoli and cheese Quiche

vegetable are really nice with cheese sause

steamed broccoli
butter or olive oil
garlic
black pepper
chili flakes
lemon juice

melt butter/get oil hot in a pan and add garlic, chili flakes and black pepper, sautee until the garlic is cooked. toss in lemon juice, then pour over broccoli and toss to coat

How about a grilled vegetable sandwich as a lunch entree? Here's the way I prepare it:

Grill some zucchini, red bell peppers, and eggplant (you migh want to prepare these a day ahead). Cut open a whole-grain baguette and rub some basil pesto on both sides. Place grilled veggies in the baguette, and top it with slices of fresh mozzarella cheese. Close and enjoy!

I pan sautee mixed veggies (make sure you cut them to have good surface area, and are added in the right order for length of cook time) and just chuck them over cous cous. The cous cous is filling and the flavor of the veggies is great with the right seasoning. All you need is a little olive oil (or something more exotic) and the dish is low fat, too!
Grill everything brushed with oil.
If camping, roll mix veggies, cut in chunks to cook at same rate, butter, seasons, wrap to seal in foil and make a pack/person. Put in fire to cook about 15-20 minutes.
