Can you please suggest some healthy snacks that use green peppers?!

Question: You can cut them into strips and dip into your favorite salad dressing or dip, like Ranch or onion dip.

You can cut into larger strips and spread chive/onion or your choice of cream cheese on them.

You can cut the top (lid) off and pull/rinse out the innards and fill the 'cup' with any kind of salad like tuna, chicken, shrimp, pasta, you can wrap with plastic wrap and take to work/school like that, you can even put the 'lid' back on before wrapping.

Remember bell peppers also come in yellow, orange and red and they all taste exactly the same regardless of color. But the different colors look really pretty together!

Green peppers taste good alone! How about a pasta salad, with the peppers, green, yellow, red, orange - it's colorful and refreshing! You don't have to add mayo, maybe a dab of sour cream and season salt!

Veggie Pizza. Food network has a great one. Simple and just a few vegtables with none other than Green Peppers. Stuffed peppers are good and you can make them with just small peppers. For a finger food, always do the Green Peppers with vegtable dip and I have an associate who dips them in velveta cheese, then rolls them in parmesian. I was surprised how good it was. Not a VC fan myself.
