Meet can go into a brine stage and that is easy to detect because it will be sticky. That is not alarming as you can just rinse that out. However if there is a smell or a slight brown look to the meat and you know you didn't brown them in a pan. Then the meat is bad. It will take more than 2 days to corrupt meat at approximately 37 degree refrigeration, but to be on the safe side, you don't actually know how long it was on the grocers shelf either, so add a day. The good thing is that you are stewing it. If you want to do that, then do cook the meat for at least an hour at above 350 degrees constant or med-low heat. The idea is STEW, it means to cook for a long period of time.

If it started going gray colored and especially if there's any smell, get rid of it.

You smell it. Anything you smell that does not smell ok to you, don't use it. Meat that is fresh does NOT have any kind of bad smell to it, but meat that is not fresh does have a disctinctly off smell to it, that starts small and gradually gets worse. If you're not sure, then it is probably fine to eat, it probably isn't bad enough to toss. But if there is any doubt, throw it out.

If there are color changes or smell bad, then the meat is no longer good for cooking.

You can smell bad meat.
Bad meat may also have a "slimy" feel to it.

Placing it out, from the freezer for a short time and then in the fridge, should be ok.

It will smell bad if it's bad.

it stinks!!!
