Answers: They are monterey jack and swiss is that makes any difference.

As long as they are refrigerated, months.

Harder cheeses are easier to keep - wrapped in grease proof paper - they need to be kept cool and dry.

Beware softer cheeses. If they start to get mouldy chuck them, and if they start to crawl and move throw them out the window and disinfect your fridge!

If kept refrigerated, a few days.

Don't chance it.

if refridgerated it is it until the outeredges of the cheese go's harder and a dark yellow compared to the other cheese

A month or two. You can also freeze cheese--it may be crumbly-but, that's better than mould.

Cheese is basically a fermented milk product. So naturally it will not last long if kept unopened for a while. Contamination by common spoilage microorganisms occur soon making the cheese rotten. So it is advisable to consume it soon after the pack is opened. However processed cheese (that is heat treated) can be used for sometime.
