Why does it seem everyone is using sea salt now, i thought iodized salt was better?!

It's all a fad.

Iodized salt in only good if you don't get enough iodine in your diet, but that's unlikely in a modern society.

I don't trust the people that told you that you will not gain water weight from sea salt. Sea salt does contain other salts besides sodium, but sodium salt (sodium chloride, NaCl) is still the main component so you still will retain water.

Sea salt is supposed to taste better. (although I'm not sure if it's just another fad)
Iodized salt provides iodine, which is necessary in your diet.
As for water weight - I don't know for sure, but I don't believe it. Sodium is sodium - and it causes your body to retain water.

Those people are wrong.

Iodized salt may be better in the sense that it is healthier (it insures you get enough iodine) but it is not better for certain purposes in the food preperation processes. Iodinized salt is what should be using in your cooking, because it is cheaper and disolves anyway, but sea salt adds texture on top of your food once your are done making it. It also has a little added flavour from the other minerals in it which pure salt doesn't have. According to the mayo clinic Americans don't really have to worry about low iodine anyways because of all the iodinized salt in the processed foods and dairy products they consume.
