What is the weird jelly thing that sometimes forms in honey?!

thats sugar. the honey will loose some of its misture as it ages. so the sugar will convens to form this molasis like goo. dont worry the honey hasnt spoiled. honey needs about 3000 years to spoil.

if you heat the honey, youll notice that the goo goes away. but it can return as you lat it cool again.

You could have some Queen's Jelly. This is what the workers give to the queen to eat. It is honey also, won't hurt you a bit.
