It's not a meal, but it's two delicious sidedishes: squash cooked in a pan with butter and salt, not too much, and sliced mushrooms cooked with melted mozarella cheese. yum!
Crab Louis: 1 can crab, torn romaine, 1 chopped tomato, 1 small can sliced olives, chopped red onion, 1 chopped boiled egg, 1,000 Island dressing. Can add avocado too. Can use canned tiny shrimp instead of crab.
I love soup so anything with lots of veggies in it, I love chicken and vegetable soup I usually cook up a huge batch and put them into containers and freeze, great to take to work for lunch.
