either are ripe, but soft soft tend to be little mushy but sweeter. id say go with the medium soft so you can cut it if you want and it will be easier to eat. it might have a little sour but sweet too.
Depends on how you like them. Definitely not firm. I like my soft soft all over. I even eat the peel. (After proper washing of course)
Medium soft...too soft and it will be mushy...too hard and it's bitter.

I like medium soft the best. It yields alot of kiwi flavor & is a bit tart. I like their texture as it is still firm and easier to work with rather than when they get really soft. When kiwi becomes really soft, they become sweeter, a bit mushy and are not tart.
I guess it all depends on what you like. They are wonderful and have such a beautiful color. I like to use them to garnish grilled shrimp salads. You can make a really lovely dessert with them. (You can make it with alcohol or without.) Take about 1 cup of champagne or sparkling non-alcoholic apple cider and add in Knox gelatin (follow the directions on the box), place a few kiwi slices (peeled) at the bottom & along the sides of a wine glass. Pour the champagne/cider into the glass. Let it chill in the fridge until firm. Garnish with one last thin kiwi slice. It makes for a festive dessert.
