Any suggestions for healthy, simple, and relatively inexpensive foods for my grocery list?!
Answers: I usually get chicken from the deli for sandwiches, bread, tortillas, and boneless skinless chicken. I'm just getting bored and am looking for some easy to fix/healthy ideas. I'm a 23 year old with a relatively active lifestyle that's lazy in the kitchen.
maybe you can go online and find some inexpensive and healthy meals.
usually vegetables are cheaper than meat so salads would be nice

Make fried rice.
Cook rice and let it cool in fridge. (i like basmatti the best)
heat pan with a bit of oil, add rice, stir and cook. Add vegies and some ham or bacon. Add soy sauce. Cook for a few minutes until it is done. You can add some cooked egg slices also.
I make this for my hubby and freeze it in chinese containers.
If you like salads, buy a bag of salad mix and canned tuna, makes a good lunch and easy to fix...also easy to prepare are fruit salads, cut it all up night before and place in fridge, add walnuts or a bit of cheese, raisins...
try boiled eggs and tuna with a cut up apple on wheat bread...
make one large pot of mac and cheese then divide it into four parts and freeze it for lunches.
Hummus on pita is delicious. My favorite is "spicy" hummus. Lot's of protein too. : ) Also it's very nutritious.
Lean Cuisine is an easy alternative to cooking all of your meals, but you must watch out for the sodium content. Try getting a rotisseree chicken at the store, eating it with a vegetable one day, then making a soup or chicken salad with it the next day. Then eat the leftovers after that. That gets you through until the next set of days (when you will be tired if chicken.) Try a healthy canned soup and crackers, I like Progresso Southwestern Vegetable, and the Chicken and Sausage Gumbo one. Frozen vegetables of any kind you like are good, they are just as healthy as the fresh and they will stay good longer if you decide to eat out or not cook some nights. Get veggies that last a long time like onions, potatoes,carrots, celery, and use those in your soups. I have to cut corners all the time. I don't cook every night but when I do I usually make too much and I freeze it for another night.
get some pasta, shrimp, and mushrooms (pre sliced if you are lazy). Saute the shrooms and the shrimp with some garlic. The liquid from the shrooms will make a nice thin sauce that you can thicken up with a little bit of flour and milk.

Tex Mex Shells and Cheese.
Prep. time 5 min. Total time 25 min.
1 lb. lean ground beef
1 pkg (12 oz.) Velveeta Shells & cheese dinner
1 can (14 1/2 oz.) Mexican-style diced tomatoes, undrained
1 1/4 cups water
1 cup Shredded Cheddar Cheese
Brown meat in skillet on medium-high heat; drain.
Stir in Velveeta Shells, tomatoes with their liquid and water. Bring to a boil. Reduce heat to medium-low; cover and simmer 15 min.
Add Cheese sauce; stir until blended. Sprinkle with shredded cheese.
Makes 4 servings.
Jazz it up: Top with shredded lettuce, chopped tomatoes, and avocado, sliced olives, Salsa or sour cream.
