I want to make pasta with Italian sausage...?!

Question: Using a tomato based-sauce, want it a little spicy, not too hot...

Can anyone recommend a type of Italian sausage please?
and/or a good tomato sauce recipe for this?

In general there are 2 kinds of bulk Italian sausage. Sweet and hot. Each of these should be browned in olive oil before adding to the sauce. How spicy is something you will have to try for yourself. Buy 1/4 pound of each and cook it in a patty to see which you like better.

A basic tomato sauce can be fairly easy and quick. For 4 servings:

1/4 cup Olive Oil
4 medium cloves garlic crushed and minced
2 14oz cans whole or crushed tomatoes
1 8oz can tomato sauce
1/2 - 1 tsp salt to taste
1 tsp dry oregano or basil

Pre heat the sauce pan to medium or medium high and add the oil. Add the garlic and saute' until the edges begin to brown. Add the tomatoes (if whole, chop them with a spatula as they cook) Add salt and the basil or oregano.

Let this cook on medium heat about 15 minutes until it begins to reduce. You will see this because the sauce will begin to thicken and stick to the edges of the pan. Add the tomato sauce and simmer for about 30 minutes.

If you are adding sausage, pre cook it by browning in olive oil then add it when you add the tomato sauce.

If you want a hotter sauce add 1/4 tsp cayenne pepper with the salt and other spice. If you want thicker sauce reduce further by cooking and simmering longer or by adding tomato paste

chorizo? is that italian? i dont know but i like it :)

I use Johnsonville sweet Italian sausage, bow tie pasta and Hunt's traditional garden sauce in a can. If I have the time and can find some good tomatoes, I'll make my own sauce.

A good sauce is Larosas, Its really good! It comes in a jar which makes it really easy... other than that what I would use is some tomato based-sauce add some minced onion, Italian seasoning, oregano, and some garlic powder and add all three until you get the taste you like!

Instead of buying sweet Italian sausage buy hot. It has pepper flakes in there. Usually the sausage is not too spicy. If that doesn't appeal to you buy the sweet and buy your favorite sauce and add red pepper flakes to it.

I usually make spaghetti and have the Italian sausage with it. Or you can make baked ziti and have the sausage with it.

GOOD DAY,
I use fresh Italian sausage , remove the cassing from the sausage, cut it into 1 inch pieces. brown it.
Now you can add sliced onions and bellpeppers and any good tomato sauce and serve over pasta.
I like to cook the sausage and use Alfredo sauce and riggato
noodle and broccoli. topped with parm cheese..
enjoy
