as a pro chef here is a really good recipe my grandfather showed me when i wa a kid.. take fresh linguica or any spicy pork sausage cut them in half lengthwise, then saute them in olive oil until they are hot on both sides. add a big splash of madeira wine or port, bring this to a boil then turn them off. serve on dollar sized bread rolls with dijon mustard..
i love sausage. i like the spicy kind but the name escapes me right now. i also like sausage when its been on the grill
