Peach and ginger for me, it's heavenly on duck!

I don't use a sauce but I fix herb roasted duck for Christmas dinner every year I put the duck in a brine for about 3 to 4 hours I use apple juice with some poultry seasoning,water and about 1/4 cup kosher salt then take the duck rinse pat dry and season all parts of duck inside and out with poultry seasoning,sage,thyme and marjoram place on a rack inside baking pan bake uncovered at 325 until golden brown and juices run clear

I love a brandied cranberry sauce. Fabulous with Duck!

Don't think I've ever eaten duck. Scared a few when I've been fishing, though.

Chinese BBQ sauce; squeeze an orange with honey; dash of light soya sauce; heat, stir well and serve.

My hubby makes the BEST seared duck breast with mushroom cream sauce. You just sear the duck in a skillet, and when it's done, while it's resting you use the fat in the same pan to sautee a bit of chopped onion and a bunch of sliced mushrooms. Cook down the mushrooms & onions, deglaze with a bit of balsamic vinegar, then add some cream. While the cream is coming up to a simmer slice your duck, plate it, and top with the sauce.
Now I'm HUNGRY.

hoisin sauce is nice.

I cant tell you just now because I'm looking after someones duck. I don't want to upset the poor little thing by announcing that I actually eat them with Hoisin sauce......oops!
