Is there any nutritional difference between steamed vegetables and raw vegetables?!


Question: I was eating some steamed/cooked broccoli today and I was wondering whether there was any nutritional difference between raw and steamed vegetables.

I love some vegetables when they are raw, but there are some (like broccoli) that I can only eat when they're steamed.

I am not really big on nutrition, I am just curious: is there a difference?

Why or why not? And if there is a difference how big of a difference is it?

any time you add heat to the equation(food) there is always something that is destroyed. The higher the temp the more is destroyed. There are certain nutritional elements in food that are highly sensetive to heat ( bioflavanoids ) . when heat is added they are gone. A good example of this is cilantro. It is always added at the end of a dish after it is taken off the heat. Try cooking it for awhile and taste it most of the flavor will be gone along with the sensetive elements of the food. Where I live (san francisco) they have raw food restaurants.

Yes, Raw is always better. the more processed/cooked they are the less nutritional value they'll have.

Cooking will affect the enzymes and vitamins to some extent but won't leach out the minerals like cooking in water would. I wouldn't want to eat raw broccoli for sure!

I heard a story somewhere that some vegetables need to be heated to release their vitamins and other goodies. I found a similar one on the CBS news site. Enjoy.

If you lightly steam your veggies you will keep more of you nutriants in them. Fresh is best then Frozen and well canned should be self explainatory look at what they add into the cans to keep them (fresh is not the right word) from spoiling.

I am not an expert in this area. But according to my high school biology class, most vitamins are destroyed at 100 degree Celsius. Hence, from a nutritional stand point steamed veg would have less than raw.
But make sure you wash you vegs before consumption since most available vege on market has been sprayed with pesticides which could cause serious poisoning.
