No, it is not true.
ANYTHING can be fattening if you eat too much of it. Many people are addicted to bread, so they pronounce it "fattening" or somehow their enemy and avoid it. They feel better about their decision when they encourage others to avoid it, too.
Whole grain breads would be a healthier choice that white breads, though.
ETS: No, I doubt subbing one starch for another will help that much, unless you are subbing whole grain or whole wheat choices for refined/white selections. Flour in and of itself is not the enemy; overeating it (or anything else) is. HTH

The carbohydrates are converted into sugars in our digestive tract and are then stored...I think...
If you eat less than 2 pieces of bread a day then that is fine. Any more and the carbs turn to fat..not much tho.
Bread is a high carb food. Any high carb food takes your body longer to burn than a low carb food.
Having said this - high carb food are important because they are a great source of energy. Thats why a lot of people eat high carb food like cereal, porridge, muesli, bread for breakfast, because it gives you an energy boost to get your day going. (this is even good on diets like the biggest loser, where they eat oats for breaky)
Bread isn't bad, if eaten in the right quanties, but if you are interested in losing weight just remember it takes more to burn off bread than say a peice of fish. Two peices a day, of a grainy bread is the recommended healthy dose.
