Why is it that salad dressings thicken up after spending some time in the refrigerator?!

olive oil based dressings will solidify in the fridge ,while oils such as corn, soy , or canola will stay liquid under refridgeration. Olive oil is great tasting for dressing salads,so just let it sit on the kitchen counter for 5 minutes, or run the bottle under very warm tap water for a minute.

its the oit that thickens up in the cold, a few minutes out of the fridge should bring it back to normal

It's probably because the oil in them solidifies. Don't think it can be prevented. Take the dressing out and bring to room temperature before using----or warm up in the microwave for a few seconds.
