Caramelizing sugar??!


Question: Will sugar caramelize in a non-stick skillet or do I need to use a regular fry pan thats non-stick. Need help ASAP..am making flan today

Use a "pot" with straight sides instead of a skillet. A skillet has sloping sides and that can cause condensation to fall into your sugar as it caramelizes.

Other than that, it doesn't matter whether you use a non-stick pan or not.

Sugar will carmelize in either it will just be easier to clean a non-stick pan. The protein in the sugars are the source of the carmelization.

any pan will do the butter will keep it from sticking
