I come from Massachusetts,I have had fresh caught Cod all my life.
It has a sweet, mild taste, almost like nothing at all.
Cod easily picks up the spices that are used on it because it is such a mild flaky, white meat fish.
Now if you do not live in New England the taste could be a little disappointing, more like fish.
Unless your Chef had the brains to soak the fish for 12 hours before cooking in whole milk.
It removes the fishy taste and returns the firm and flaky fish to its original condition
it is awesome, fried, grilled, baked. serve with just about anything, from rice pilaf to mac n cheese

I really like it myself, and it is fairly popular. It is commonly used for fish and chips, so it is served fried a lot of the time, but you can bake it just as well.
Its real plain unless its jazzed up with a sauce or breading... I recommend atleast some lime juice... its pretty much the same thing they make FISH STICKS with...hope I didn't let you down..... HOWEVER, Alaskan Black Cod is to die for!!!
Yes, it is nice and delicate, light seasoning and parm cheese make it terrific. Careful if you bought it fresh for the little bones, it is slow this way you don't swallow a bone by mistake. If you buy it from a grocer ask them to trim the bones out.
It's very mild and not fishy tasting. It's really good.
