Chicken biryani
If you're making a packed lunch, why not try couscous for a change - make it with chicken stock and toss peas/capsicum/diced ham or shredded cooked chicken through it. Or make it Persian-style, as below:
Persian Couscous
Ingredients:
1 cup couscous - uncooked
2 tsp. vegetable stock powder
1/2 tsp. sugar
1/2 an orange rind grated
2 cups boiling water
1/2 cup chopped almonds or pine nuts
1/2 cup currants
2 tbs. butter or olive oil
1/2 cup dried apricots
2 spring onions
1/4 cup chopped coriander leaves
Method:
1. Stir the couscous, stockpowder, sugar, and grated orange rind together in a bowl.
2. Add boiling water and leave to stand for 6 minutes.
3. Heat nuts and currants in the butter until the nuts turn lightly brown and the currants swell.
4. Chop the apricots and add to nuts and currant mixture.
5. Stir nut and fruit mixture into the couscous.
6. Add spring onions and coriander just before serving.
This dish may be served hot or cold.
I'm currently going through a phase of tinned soup - there are some good ones out there, though when I get my lazy self back into gear I'll start making big batches at home and bringing them in to store in the work freezer again.
Or pasta or potato salad? Add tuna or ham for protein and flavour. Or even using wraps rather than sandwiches might give you a bit of texture/flavour variation - tends to allow more focus on the filling.
Or if you're buying, what about a doner kebab, or sushi? Or ramen noodles?
You could even make your own faux-stir fry at work, using 2 minute noodles, microwaved frozen veg and a stirfry sauce tossed through, then microwaved for another minute.
Maybe Have fried banana and bacon. Toast....
