P.S. I think thats awesome that your mom grows her own veggies. I want to do that to but I live in the desert so not many things survive out here.
Green or "bunching" onions are selected varieties of white onion (Allium cepa) planted at high density or from the non-bulbing onion group (Allium fistulosum) generally called Japanese-bunching. Harvest maturity is generally accepted as mean diameter of 0.6 to 1.3 cm (1/4 to 1/2 inch) in diameter at the base plate of the immature bulb.

The best Red, White and Yellow.
Red. Sweet, red skinned onions with fine-grained flesh.
White. Large, silvery white onions with fine-grained, mild flesh.
Yellow. Large, slightly flattened with brown skin. Firm, creamy, mild flesh.
HOW TO GROW ONIONS FROM PLANTS OR SETS: Plant as early in the spring as soon as the ground can be worked. Make furrows about 1" deep, carefully place plants or sets, lightly press in and cover with soil. Space 3" apart. Pull green tops as needed for scallions or allow bulbs to mature fully.
