Can anyone tell me why the ice cream inside the tempura ice cream did not melt during frying?!

They use ice-cream with TONS of fat... its almost the consistancy of cheese. (cheese sticks are the bomb) They fry the ice-cream on high heat quickly to lock in the goodness

i am curious as well!
