Answers: Why are some "100% whole wheat" bread lighter color (+better tasting) than others? For example I got a dark brown loaf by Pepperidge Farms and it tastes like wood :(. However, I also got a yellow colored loaf called "Martin's 100% Whole Wheat Potato Bread" Both of them are whole wheat so why is one so much lighter (and better tasting)? Is it unhealthier than the dark brown one?
Check the fiber content per slice on the label. It may be you are being misled by "100% whole GRAIN", rather than it being "100% whole WHEAT".
Otherwise, they just add caramel coloring to the dough. Roman Meal is a prime example: very little fiber, but it sure "looks" hearty.
You're right, it DOES taste like wood, no matter HOW much you try to alter or cover the flavor (with butter or jelly!)
BUT, look at the fiber content. I've noticed that the higher the fiber, the stronger the flavor. And fiber is one really important dietary need that most people don't get enough of.
That kind is worse for you. But you are right the other kind tastes so bad! Just buy what you bought (well it's not TOO unhealthy) it just has a difference in fiber. Try to eat enough fiber and you'll be fine.
