What is the best soup?!
3 lbs all-purpose potatoes, scrubbed and pierced in several places
1 Tbsp. stick butter or margarine
1 1/2 C. finely chopped onions
2 Tbsp. minced garlic
1 can (14 1/2 oz) chicken broth
3 C. milk
1 tsp. salt
1/4 tsp. pepper
TOPPINGS: shredded cheddar cheese, crumbled bacon & chopped scallions
1. Heat oven to 400|F.
2. Bake potatoes 1 hour or until tender when pierced. Peel when cool enough to handle.
3. Melt Butter in a 4 to 6 qt pot over medium low heat. Stir in onions and garlic, cover and cook 10 minutes until soft, but not brown. Add 2/3 of the potatoes and mash with a potato masher. Add broth, milk, salt and pepper. Bring to a simmer, stirring occasionally.
4. Cut remaining potatoes in small cubes. Add to soup and stir gently to reheat. Sprinkle each serving with toppings.

The best soup is Baked Potato Soup (a creamy potato soup made with fresh cream, bacon, potatoes with skin on, broth, onions, green onions, seasoning salt, fresh ground pepper) AND top it with fresh shredder cheddar, bacon and chopped green onions. When making it it should be thick and creamy, add a mix of cornstarch and milk to thicken and bring to a boil. YUM!

My Grandmother's home made chicken soup with dumplings and my acorn squash soup and my Aunt's minestrone soup. Oh and also my friend's pumpkin soup. All are wonderful and tasty and none of them have ever seen a can of anything.

I love most soups, but I think potato and leek or cream of mushroom would be among my favourites.
Good old cream of tomato, or oxtail.

Cream of Artichoke Soup
Ingredients:
* 2 tablespoons butter
* 1/2 cup minced onion
* 1 clove minced garlic
* 1 (15 ounce) can artichoke bottoms packed in water, drained
* 1 1/2 cups chicken broth
* 1/2 cup whipping cream
* 1/2 teaspoon EACH salt and pepper

Method
Heat butter over medium heat in a 2-quart saucepan; saute onion and garlic until translucent. Meanwhile place remaining ingredients in blender and process until smooth. Return to saucepan and heat through.
Notes: This delicious, elegant soup takes only minutes to make, yet is worthy of company. It makes a special occasion lunch paired with toasted French bread with melted gruyere cheese and tomato slices on top.
