Ripe Bananas? Can you freeze mashed banana in portion size for making muffins at a later date?!


Question: banana muffins with chocolate chips out of nigella lawsons book are delicious, as is the whole book in my opinion, but can I freeze ripe mashed bananas in advance in portion size?
Anybody yet to buy and try Delias new quick methods, I think they look more time consuming than buying fresh, from the tv series so far? what do you think!

I always freeze the bananas when they get too ripe to eat. I leave the peel on so it does not get freezer burn and also keeps the flavor in. When ready to use, I simply cut the banana in 3 pieces and peel the peel off (sometimes it helps to use the knife to help peel of the skin) It thaws out quickly. After peeling it, I just mash it and make my banana bread/muffins, etc.

yes you can - you can also use them in smoothies at a later day.

dont like Delia's programme - she has just got on Nigella bandwagon and some of her ideas are silly - tinned mince - how hard is it to brown mince - even as time saving that makes little sense as it only takes 10 mins or so!

l like Delias new quick methods-l want fast and easy for myself.

Mash the banana - add some lemon juice to stop browing - and freeze.

As to Delia - I think she is trying to help people who really have no idea how to cook at all, or who lack time - although I do know someone who has tried them and she says they are very nice - quick and easy- and tasty too.

Have to say I have used tinned meat to make pies before but would probably not use the frozen mash for the cottage pie even if I do resort to frozen pastry for pies.

I however can cook from scratch unlike someone like my sister who could burn water and can't make mash for toffee even with a ricer!

you can freeze banana. but you dont need to mash. just peel, wrap and freeze.
i always eat freezed banana in summer. not so hard and really yummy? you can put them in smootie as icecream.

Yes you can freeze whole bananas so I'm sure you can easily freeze mashed bananas. Enjoy the muffins...they sound lovely!
