Why does the first cup of coffee from the pot taste so much better than any other cups from the same pot?!
Answers: I made a pot of coffee yesterday, and I noticed the first cup always tastes better than the 2nd, 3rd, 4th even. Why is this?
Coffee oils oxidize quickly, particularly if the coffee is kept hot in a conventional drip coffee maker, and exposed to air. You can keep more of that "fresh" taste by decanting your freshly brewed coffee into a thermal carafe, immediately after the brewing is complete. This keeps the coffee at serving temperature for a few hours, but slows the oxidation of the oils.

For me, it's a mix between what "Luci F" said and what "PAULSC" copied from that link of his. Luci's answer about being the freshest is the truest sensation for me. Hot is good, but, as I've alway said, if you're drinking good coffee, hot isn't as essential as when you're drinking some old pot of trash someone threw together. Oh, I still like it very warm / hot, but temperature isn't as important the better the coffee is and is brewed. What Paul says is true but it just doesn't sound authentic, like he knows first hand what it's all about. More, he just found a link somewhere and got two points. I think the flavor hitting those taste buds, plus the aroma just makes it go down soooooo good.
so true! i've noticed this, i think it's because it's freshly made and probably hot so it taste alot better, but that's why i love to be the one to make coffee, i always get to have the first drink.
Try an electric percolator. The flavor is not even comparable to drip coffee. You won't be able to go back!!
Brewed coffee begins to degrade/oxidize if left on a heat source. I observed a cupping (taste panel for coffee) done for a large hotel group that showed their most decorative heated carafes were the worst. The coffee went "bad" within 30 minutes of brewing because it was kept too hot. The coffee that kept the best flavor over time was poured into airpots right after brewing.
The first cup of coffe is always the best. When coffee sits on the heating element it over brews the coffee.
