Meat-free hors d'oeuvres for a Summer afternoon wedding ?!


Question: We're thinking of having a wedding in the local community centre, perhaps about 2pm, immediately followed by a light reception. We're both mature students and our parents aren't really in a position to contribute a lot financially so we're on a budget.

Because of our location, it has to be dairy kosher ie no meat at all, fish is fine. We're thinking of a selection of cold platters and cakes, such as ...

Crudites and dips
Hummus and pitta
Selection of cheeses and crackers
Bagels with smoked salmon
Fish balls
Quiche
Fresh fruit salad

Any other ideas ?

Almond bread with brie and strawberries
You can use fruit bread lightly toasted and sliced into rectangles... then simply put a thin slice of brie atop, and a quarter of a strawberry... of course you can substitute the bread type and the fruit type and the cheese type!


avocado, sour cream and salsa in toast cups...
a bit fiddly, but basically you get some white bread, cut the slices off, roll it out flat with a rolling pin (lightly spray pin with oil if it sticks), cut out circles of bread and press them into individual quiche trays or cupcake trays or whatever.

Bake them until a little golden and crisp. You can make these in advance but don;t fill them until just prior to being needed. Fill them with a little guocamole (mushed up avocado with finely chopped red onion, lemon juice, salt, pepper, and top with some deseeded finely diced tomatoes. Yummo!

You can also fill these with goats cheese and roasted capsicum... or whatever filling you like!!!


Melba toasts
You can buy these in packages and top them with a tuna mix
(mush up tuna with some finely chopped red onion and finely chopped red capsicum - peppers - and salt and pepper, and mayonnaise. Smoosh this up u ntil it is not chunky and put this on the melba toasts. You can garnish this with a quarter of a cherry tomato

Top the melba toasts with guacomole and again garhish with a quarte of a cherry tomato or a diamond of red capsicum



Profiteroles
If you fancy yourself as a bit of a cook, you could have a practice run at making profiteroles. It;s really quite easy.. just look for a recipe for CHOUX PASTRY on the net and follow it.
Then you can slice them in half (like you would a breadroll) and fill with a fruity cream cheese filling (mix cream cheese wtih diced dried fruits that have been mascerated overnight in a ginger wine, for example),

OR corn relish mixed with cream cheese - you can put some chopped chives through it for a bit of colour and extra texture and flavour,

OR you can fill with a smoked salmon mix (dice smoked salmon, add sour cream and chopped chives, salt and a little cayenne pepper or paprika to taste)


Sushi is great for canapes!!! Google that one.. you need to know how to make the sushi rice, and then you can put whatever fillings inside you like!!!! You can make sushi rice balls witha filling inside... then roll the rice ball in sesame seeds, or you can make the traditional sushi with the nori, rice and filling. Google this one though!!!!


If you are doing fruit salad, why not make it all finger food and make fruit salad skewers!!! THen you can drizzle them with a honey and orange liqueur mixture or something tasty like that... and people don;t need a bowl and spoon or fork! They great and you can put them on mini skewers and also intersperse marshmallows for a bit of added colour and flavour.

Devilled eggs

This is delicious and easy. You will have to adjust the recipe accordingly, depending on how much is needed.

Phyllo wrapped asparagus

18 asparagus spears
16 oz pkg frozen phyllo dough sheets, thawed
1/2 c butter
1/2 c finely grated Parmesan cheese

Preheat oven 375

Snap off the tough ends of the asparagus. Unwrap the phyllo and cut the stack in half lengthwise. Cover the phyllo with a damp towel to keep it from drying out. Take 1 sheet of phyllo and brush lightly with some melted butter. Sprinkle with some Parmesan. Place 2 asparagus spears on the short end of the sheet. Roll up jelly roll style. Place each seam side down, on a baking sheet. Brush with more melted butter and sprinkle with more Parmesan. Repeat until all the asparagus spears are used up. Place baking sheet in oven and bake 15 to 18 minutes or until golden brown and crispy.
