It should be fine. Sell-by and use-by dates are intentionally very conservative, for two primary reasons:

1) If you're a typically mindless consumer, you will throw it out and... go buy MORE! Woo hoo for the food companies!

2) Lawsuits. So when some monkey eats a can of some goop which was marked 'use by two years ago' and gets ill, the case gets thrown out. Also, if they really put the 'use by' date at the date JUST before it would spoil, some people would actually get sick, and some of them would sue.

Anyway, your bacon is likely fine for up to a couple weeks after the sell-by. Bacon is usually cured and/or smoked, both of which are preserving treatments, and it typically has a lot of fat, which is resistant to oxidation. Not impervious, but resistant.

You final and most important test with food, always: smell it. If something is spoiling, it does NOT smell good.

Yes, the bacon is still good. They WANT you to eat it within 7 days so you buy more... I'd probably eat it within 10 days though. Make sure you cook it really well.

Smell it to tell. Most likely it is fine. It tends to taste saltier as it gets older, though.

I would go with if it does not smell funny then it is fine!

If it was refrigerated and it don't smell bad and You cook it well Its O.K. In most cases The dates are used to predict when the product will lose its best quality.
