The bread I ate said "fresh through April 2"...?!

You will find it is a little dryer, so it is better to have with a moister filling like tomato or cucumber, or as toast.

You're going to be fine.That's a "Best by" date. If you eat it after that, it's just not as fresh. You can usually drink milk a day or two after it expires. You probably have about 3 more days before it starts to go bad. Just watch it and make sure it's not moldy. Sometimes bread gets moldy and you can't see it, so smell it before you eat it, just to make sure. Also, if you keep bread in the fridge, it stays fresh longer.
it's probably not moldy, don't worry, probably just slightly stale. bread-making companies make the expiration date a lot earlier than it really is to prevent lawsuits
This is a big debate question. When bread is outdated, even though you can't see mold, it can cause diarrhea and lead to death if you continue to eat it. Bread companies have changed their date codes over the past 6 years. They used to give it 7 days from the day of baking before they recommended you not eat it. Now they code it as much as 10 days from baking and the uncoded bread is bread they bake and immediately freeze. I don't think you have to worry, but don't do that too often. If you don't eat a loaf of bread in a week, store the bread in the freezer and use your toaster to thaw what you need as you need it. Bread will last up to 3 months in the freezer if kept frozen.
its fine - if its green - don't eat it- and if its really old - it falls apart - and you won't even want to make it - you'll be able to tell!

Keep it in the refrigerator...that way you want have any more worries...on this.
