Why are some twisties thin and hard, rather then thick and crunchy?!


Question: For those that don't know, twisties are a snack food similar to Cheetos, available in Australia, Malta, New Zealand, Singapore, Malaysia, Fiji and now the UK. In the UK they're known as "Tastees".

They use an extruder to put the twistie batter into hot oil to fry them. It doesn't extrude the batter in perfect even shapes every time. The thinner ones are harder because the center of the twistie gets cooks more than in the thicker ones.

Just like French fries, or "chips". The thicker ones are soft in the center and the thinner ones are crispy all the way through.

It's just the nature of fried foods depending on how much heat reaches the center of the food.
