I have a question about a chicken taquito sort of thing..?!

Question: It's like a taquito but much thicker and longer, filled with cheese and chicken mostly, but is like.. fried I think, and I can't think of the name and it's bugging me. I think it starts with a c, and you can get it at a few places in northern Texas, but elsewhere, I'm unsure. It's also very light colored, and flat mostly after cooking.
