Egg beaters consume within 7 days?!

Question: i buy eggbeaters and it states consume within 7 days after opening but i never even come close to consuming all of it within 7 days, so i was wondering what would be the adverse effects of eating it after 7 days? in the past i've consumed it 2-3 weeks after opening and they seemed fine to me--no difference in taste or stomach problems afterwards, so i don't see a problem with keeping it in the fridge for longer than 7 days, especially since it gets cooked anyways, thus i'm guessing killing any bacterias or whatever....anyone can tell me any problems though?

The reason for this is because the health department does not recommend consuming any perishable food after 7 days if held at 41 F. Food should not be eaten if it was held at 45 F after 3 days. The people who make the Egg Beaters are just following the rules.

Try looking at it this way: Would you go to a restaurant and eat their food knowing that it had been in their fridge for longer than 7 days? Its just a precaution. What you do with your food after you purchase it is entirely up to you.
