Need lunch ideas (food that doesn't need to be heated)?!


Question: I eat lunch in a park (from my cooler). What are good ideas? I usually bring an apple and chocolate but that doesn't seem to be enough. I'm not into sandwiches really.

I have the same problem as you do!!!
I'm sick of sandwiches myself, so here are my ideas:
- Pasta salad, just boil some pasta and add a mixture of ingredients you'll like, such as: peppers, onions, olives, tomatoes, cheese, leftover roasted chicken, tuna, corn, etc. You can add mayo or italian dressing, but to cut the calories you could add olive oil only.
- Plain salad. I usually put in lettuce, spinach leaves (raw), or any mixture of leafy vegetables. Add tomatoes, avocado, tuna, corn, raisins, hard boiled eggs, bits of ham, shredded carrots, etc., the sky is the limit. Drizzle with olive oil and vinegar (so you don't need to add salt). You can put some croutons on top as well.
- Other dish that I really like and it's good for when you're hungry is: the night before prepare plain rice (white rice, brown rice, whatever you like), cut a tomato in cubes and have a can of tuna ready. Mix these 3 ingredients and add mayo to the mix. It will become a paste like rice, put it in a tupper and you can eat it cold. It tastes very good.
- For a change, if you like cereal you can bring some in a tupper and just add milk!!
- Quiches, or spanish tortillas, you can eat them cold as well.
All of the above are very simple lunches you can prepare the night before, it will take you 15 minutes.

I pack my kids some California rolls for lunch. Bring in some veggies and dip. Some soups in a thermos. Bring in a small container of peanut butter for dipping your apple.

Pasta Salad! I love that stuff.

I luv hummos and pita wedges or veggies, salsa and baked tostitoes, make your own yogurt parfait w/ vanilla yogurt, granola, and fresh berries, cheese and crackers with grapes... this is all I can think of at the moment, hope it helps :)

Tuna wraps always work- with carrots and cucumber. mmmm. Very simple to make, they look appetizing and they last.

grilled italian sausage and tomatoes:

INGREDIENTS
1 1/2 tablespoons red wine vinegar
1 tablespoon balsamic vinegar
1/4 teaspoon salt
1/8 teaspoon fresh-ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 1/2 tablespoons olive oil
3 vine-ripened tomatoes, each cut into 6 slices
1/3 red onion, thinly sliced
6 (4 ounce) mild Italian sausage links
6 French rolls, halved lengthwise


DIRECTIONS
Preheat an outdoor grill for medium heat.
Whisk together red wine vinegar, balsamic vinegar, salt, pepper, oregano, basil, and olive oil in a small bowl. Arrange the tomato and onion slices on a serving platter, and pour dressing overtop. Allow to marinate at room temperature while you cook the sausages.
Pierce the sausages with the tip of a sharp knife a few times, then place onto the grill. Cook until no longer pink in the center, turning them frequently so that they cook evenly and have lightly browned, about 15 minutes total. Serve on French rolls with marinated tomatoes and onions.
