6 Scoops Vanilla Ice Cream
Whipped Cream
Chocolate Syrup
Strawberry Sundae Topping
Fresh or Canned Pineapple
Chopped Walnuts
Directions:
1. Unwrap Banana Twins?, arrange 3 cakes in ice cream dishes or bowls.
2. Put 2 scoops of ice cream into dishes. Top with chocolate syrup, strawberry topping, pineapple, whipped cream and nuts.
Makes 3 Sundaes

6 Strawberry Shortcake Rolls
2 5.9 Oz. Pkgs. Banana Pudding*
Fresh Strawberries
Directions:
1. Place carton of cakes in freezer for one hour. Freezing the cakes makes them easier to slice.
2. Prepare pudding according to directions on package. Cover and chill.
3. After cakes have had time to freeze, slice them into 1/2" pieces. Place a layer of cakes in bottom of clear serving bowl. Top with half of the pudding. Repeat. Arrange remaining pieces of cake on top and garnish with sliced strawberries.
*Vanilla Pudding May Also Be Used

4 Nutty Bars? Wafer Bars
1/3 Cup Cold Milk
6 Scoops Vanilla Ice Cream
(Optional) Chocolate Chips
(Optional) Peanut Butter Chips
Directions:
1. While still wrapped, crumble the two packages of Nutty Bars? into smaller pieces. Unwrap and pour into a separate bowl. Set aside.
2. Scoop ice cream into blender. Then, add milk and Nutty Bars?. Cover and blend until smooth. For a thicker shake, you may add more ice cream and blend again.
3. Pour into chilled glasses. Top with more crumbled Nutty Bars? and peanut butter or chocolate chips.
Makes 2 Milkshakes

It's too hot and muggy to turn the oven on and you're too busy with summertime activities to bother spending hours in the kitchen. Yet you want to serve a dessert for dinner. Try these refreshing recipes that will get you in and out of the kitchen in 10 minutes! Even the kids can make these! There are a number of variations to the recipes, so you can make them often and never serve the same dessert twice. As an added bonus, they are low in calories and fat! Keep cool and enjoy!
Cheesecake Tartlets
12.3 oz package extra firm light tofu
2 Tbsp. fat-free milk
1- 3.4 oz package cheesecake instant pudding mix (non-fat)
2 Tbsp. fat-free milk
1 package prepared graham cracker mini tart crusts
1 pressurized can of light whipped cream
Fresh fruit
Puree the tofu and 2 Tbsp milk in a blender until very smooth. Add the pudding mix and 2 Tbsp milk and puree on low to blend in completely. Immediately pour into 6 mini tart crusts. Chill until firm. Garnish with a small squirt of whipped cream and fresh fruit. Makes 6 servings. 176 calories, 6 grams fat, 1 gram saturated fat
Variations: Use lemon instant pudding or chocolate mousse mix
Strawberry White Chocolate Parfaits
1 cup sliced fresh strawberries (to equal 1/2 cup puree) plus 4 strawberries for garnish
2 Tbsp sugar
1 1/2 cups fat-free milk
1- 3.4 oz package white chocolate instant pudding mix (non-fat)
1 pressurized can of light whipped cream
Puree the strawberries and sugar in a blender until smooth. Set aside. Combine the pudding mix and milk in a bowl and mix for two minutes. Let stand for 2 minutes. Pour 1/2 of pureed strawberries into 4 cups. Layer with the pudding and remaining puree. Chill until firm. Garnish with a small squirt of whipped cream and a strawberry. Makes four 1/2 cup servings. 150 calories, 1 gram fat, 1 gram saturated fat
Variations: Use fresh cherries and chocolate instant pudding mix or fresh peaches and vanilla pudding mix

3 cups frozen fat-free vanilla yogurt
2 Tbsp peanut butter
1/2 of chocolate sauce (recipe below)
1 reduced fat prepared graham cracker crust
1 pressurized can of light whipped cream
Chocolate Sauce:
2 Tbsp sugar
2 Tbsp water
1 Tbsp cocoa
1/2 tsp vanilla
Stir ingredients together. Microwave 20 seconds or until sugar is dissolved.
Soften ice cream in a bowl. Swirl in peanut butter and 1/2 chocolate sauce. Immediately pour into pie crust. Freeze until firm. Garnish with small squirt of whipped cream and remaining chocolate sauce. Makes 6 servings. 285 calories, 8 grams fat, 1 gram saturated fat
Variations: Use any flavor of fat-free frozen yogurt

Watermelon
Remove seeds from watermelon. Puree in a blender until liquid. Sieve to remove any seeds. Pour watermelon juice into popsicle molds. Freeze until firm.

Melt one cup of chocolate chips gently in the microwave. Stir in 2 tablespoons of butter. Heat a little more, if need be, to get the butter mixed in well. Stir in a 1/2 teaspoon of vanilla extract.
This makes a homemade hot fudge sauce to put on ice cream or fresh or frozen fruit. It will harden when you put it on something cold. You will amaze your guests : )

Layer angel food cake with fresh blackberries and raspberries with a simple brandy syrup, with freshly whipped heavy cream with vanilla in it between layers, and on top. Add fresh berries on the top. YUM
