Low fat means healthy-Low fat alternatives can still contain high levels of sugar and other nasties, so always read the label

Late night eating equals weight gain-No matter what time of day you eat, consuming more calories than you burn off will result in weight gain.

You have the right information now we have to do something with it. However you don't mention anything about canned foods. Might be interesting to know their nutritional value too.

I agree with about 99% of what you said, but I don't really see a question here. Maybe just some fleshing out. Carbs aren't really "bad" but most of the carbs an average American consumes really is bad:Chips, large volumes of pasta in a buttery or otherwise fatty sauce or alcohol. But yeah, if you have good carbs that your body will need it's all good. Just one example.

It's interesting what you said about late night eating, I was always told not to eat after 10pm, but yeah, I suppose calories are calaries whenever they get eaten.
