Is blue cheese mold?!
Answers: I'm having a debate with my friend at school who says that if blue cheese was mold, then we wouldn't be able to eat it without getting sick. I read somewhere that it's healthy to eat. Which person is right here?

*Besides, there are other cheeses that are very stinky and even slimy. Some have been exposed to various bacteria which create a penicillin rind and actually taste like mold.
*On a personal note, I hated blue cheese growing up. Then I had quality blue cheese (such as Maytag, Gorgonzola, Roquefort, and Stilton) and now I love it! Every blue cheese has a different flavor profile, so don't knock it 'till you've tried it.

It's aged cheese. In other words, yeah, it's old. And you couldn't pay me to eat it.

yes it is, but ALL types of cheese are mold, and perfectly safe to eat.

Sarah J and diego~girl are the closest, correct all cheese have a bacteria in most to add flavour and aid in the aging process, blue cheese as the one girl said is a cows milk cheese and when pressed they inject with long needles and penniclium type of bacteria and as it ages and drys the bacteria forms the blue veins, like those in Dansh blue, French Rouqerfort ( it is sheep milk), Gorgozola, Cammenzola, Maytag Blue all are inoculated the same way.
And no there is no danger or risk eating them, I have had all kinds of cheese in my 20+ years as a chef, some blues some stinky and ones from Yaks, Mares and Camel milk.
It's mold.
