A strip of fat used in larding, esp. as drawn through the substance of meat, chicken, etc., with a kind of needle or pin.

I think they are 'lardons'.
these are cubes of bacon with fat on, like pancetta etc. you can usually buy them ready cubed, or you can do it yourself from a nice fatty piece of meat
