Question: What is the actual difference between all the types of cheeses? Seriously, what exactly is the difference between cheddar and swiss and provolone etc. Up until now I had never really thought about it and now I'm very curious. Are they aged differently or what? If anyone has a real answer it would be greatly appreciated

It depends on various factors:
The type of milk used (cow,goat,sheep,buffalo etc)
The manner in which it has been made (different types of Rennet and different methods)
The time taken for the process to be over, and full maturity acheived be it three days or three years.
It also depends on additional factors such as the usual preferences of the country they are originally from, and manner of consumption.

Depends on the ingredients, ageing etc,
Some have cows milk some have goats milk,
Some are not sold until at least 5 years old some 2 weeks
it depends on what taste and type of cheese ur going for.

Cheedar is more spicy

Swiss is sweet

Provolone takes its flavor by being smoked.

All cheeses are constructed differently, it depends on the time of year, the food the animal ingests, the types of animal the milk is from and the length of time it is left to ripen, or age.
All you have to do is taste them and you will inderstand the differences really quickly. There's nothing better than a well made cheese.

They taste different, are aged different, they look different, they may smell different, may feel different, may come from different animals, may contain herbs/spices/etc.
