Is spinach supposed to taste bitter?!

Yes,
The cure?
Saute in olive oil
Then( in a small frying pan) brown fresh garlic (lightly).
Take the spinach out and drain the excess oil( in a colander).
Put in a plate and pour the oil/ garlic mixture on top.
The squeeze some fresh lemon on it.
Goodbye bitterness.

Yeah it's sort of a cross between bitter, astringent and tannic.That quality is more noticeable in cooked spinach than it is in raw spinach

Bruised spinach is bitter, like most greens.

Try raw, torn not chopped, in salads. It is not bitter this way and you get the full benefit of the vitamins and phytonutrients in it.

If eaten with cooked eggs, you can unlock the great quantity of iron in spinach.

This might not suit everybody but my family always cooked a lot of greens. Spinach, turnip tops, mustard greens, etc. The trick we always used was to put about 1 tablespoon of sugar in the greens while cooking. Always worked for us. Am from southern US where we eat loads of greens.
