Question: Why do you need to lightly brown the rice when cooking spanish rice- and other dishes like this. What does it do to the rice??

rice absorbs the first flavour it contacts same as dried raisins.If you're making spanish rice fry your onions first the rice will then absorb both these flavours giving the dish a deeper stronger taste. Most Spanish people I know do this. If you're doing something like a curry and want to add rice as a side dish wash your rice then soak it in pineapple juice along with raisins onion and small diced cucumber, then add all to your pan and cook as normal.

You lightly brown the rice first because it adds a different flavor to the rice. By cooking it in a bit of oil first, you make the rice first absorb a bit of oil. The oil replaces some of the broth used to cook the rice. It's the same thing that happens to fries, only not as extreme.

It gives it a slightly smoky/sweet flavor and a pretty golden color.

I think it is because it makes it more, not crunchy, but, gives it a different texture. Spanish rice has a completely different texture than regular white, brown or arborio rice.

It toasts the rice which gives it a slightly nutty flavor. I do it all the time with basmati rice.

Gives the rice a little toasty flavor.
Also, it makes the rice not as sticky when cooked.
