What is high gluten flour with balancer,i know the gluten part ,but what is the balancer?!
Answers: I make pizza dough and never understood what a balancer was , is it one of the flour fillers,or an actual ingrediant added to the flour to enhance the rising process
I thought "balancer" flour was another name for high gluten flour... particularly a name used by Pillsbury.
Are you sure it's not "enhancer" instead of "balancer"?
For example, Amylase is added to increase the fermentation process so the dough has better lift and texture.
