I'm making pancakes tonight for dinner... Any good recipes or secrets to make really fluffy ones!?!

very simple recipie for u my friend,.,,, to night i am also going to make ,,, and do one thing do a topping of jam sauce ,, ok ,,, its very easy to make it just 2 spoons of jam and put it under a microwave and mix small amount of water or millk,, and heat it,,,,,

Ingredients
1 1/4 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
3/4 teaspoon salt
1 1/3 cups milk
3 tablespoons vegetable oil
1 egg
Directions
1Mix all dry ingredients together in a bowl (I use a 4 cup measuring cup).
2Mix milk, oil and egg in smaller bowl (I use 2 cup measuring cup).
3Mix liquid ingredients into dry ingredients.
4Make 4 inch pancakes in a medium heated non-stick pan or griddle or use a small amount of oil in regular pan.
5Cook until golden brown.
6Serve with butter or the topping which i told u

Put lots of love into them. That'll make them taste wonderful. Other than that, I really don't know lol. Sorry.

If you are using a store bought brand of Pancake Mix like
Krustez you substitute the water with 7up

and the other thing to do is try not to stir the batter too much, that can create too much gluten which makes pancakes hard.

Another thing to do is to use either a large shallow pan or a griddle. Make sure that the pan is pleny hot normally a few drops on it will help show if it's hot enough cause it'll rapidly boil making the water look like it's dancing.

Once hot either brush on or spread some butter onto the pan trying to cover as much of the surface as possible without leaving it wet then put on some batter making sure to leave plenty of room to work with so you don't get the conjoined pancakes or have no room to flip them.

I normally go by my best judgement instead of time for cooking on the stove top but you can wait for bubbles to form on the top before flipping and waiting a couple of minutes before checking and removing

Hi! Here is a recipe for Swedish pancakes:

Ingredients

3 large egg
1 cup milk
2 teaspoons sugar
salt, to taste
1 teaspoon baking powder
5 tablespoons flour
1/4 cup butter, melted and cooled

Directions
1. Allow eggs and milk to rise to room temperature.

2. Beat eggs until frothy; slowly add milk.

3. Blend in each ingredient separately.

4. Add the flour 1 tbsp.

5. at a time; add the butter last.

6. (Batter will be thin and may contain lumps- not to worry!) Heat griddle or skillet on medium to med -lowheat.

7. Add a small amout of butter and swirl around.

8. Pour batter onto the hot griddle by the tablespoonful; turn pancakes when they become bubbly.

9. Cook until golden and remove to plate.

10. Note: You may keep stacks warm in the oven on low while you cook a bunch of these up.

11. Serve with butter, Swedish lingonberry or Swedish strawberry preserve and a dusting of powdered sugar.

Use Krusteaz pancake mix. It turns out right every time and tastes like restaurant pancakes.

Add whipped egg whites to the batter

If you made the last ones from scratch, It sounds like you didn't put baking powder in. Next time, use self-rising flour. It already has baking powder & salt in it.
The main ingredients in pancakes are S. R. flour, sugar eggs, & milk.. To make them fluffier' add 1/2 teaspoon baking soda to the flour & sugar.at the beginning..
