In the South we usually cook them with ham hock, hog jowl, or bacon for added flavor. You can use some diced ham if you like, and then can eat the ham with the peas. Season to taste with any seasoning you desire...many people eat them with pepper sauce on them also, or mayonnaise (sounds odd, but is tasty).
