Why do scallops sometimes taste bitter?!

Question: If a scallop is bitter it might be because it was prepared by someone who doesn't know what there doing. There is a part of the scallop that needs to be removed called the "beard". If it isn't removed it will taste bitter. It won't hurt you, it just doesn't taste good.

Maybe they aren't fresh or if they are, could there be a better season for sweet ones? Not sure but would like to know too bc I luv scallops, they're my favorite seafood besides king crab. I drive 12 hrs to a restaurant on the east coast that has the best scallops I've ever tasted in my life... will go in about another month and can't wait!

The sweetness has alot to do with the species and whether or not they are bay or sea scallops.

Sea scallops, the bigger ones, tend to be much sweeter in flavor but more expensive than bay scallops.
