Most people think that raw vegetables are always better for you than cooked vegetables, but this is not always true. It is true that some of the water soluble vitamins (such as vitamin C) are destroyed by heating, so there will be less vitamin C in a cooked carrot than in a similar raw carrot.

But for some nutrients, cooking (and juicing) is more nutritious, because it makes the nutrients more easily assimilated. Cooking and juicing breaks down tough fibres and allows the digestive juices to work more effectively on the vegetable.


This is particularly important for someone who is elderly, ill or who has impaired digestion. For example, research has shown that we absorb approximately 3-4% of carotenoids from raw carrots and 15-20% from cooked carrots. Carotenoids are plant pigments that give yellow, orange and red fruit and vegetables their colour. Carotenoids are powerful antioxidants, so have a role in helping us fight old age and cancer.

cooked food = dead enzymes

raw food = full of healthy enzymes = healthy body

raw food forces you to chew more which means your tummy has time to get ready to accept and digest the food, all of which makes you a healthier person

its good because the enzimes are needed in your body (but dont eat them raw all of the time because you dont want too many enzimes)

cooked:
cooked veggies arent good for you...lightly steamed are! they actually release the nutrients so its even better for you. cooking veggies or boiling them destorys all of the nutrients in them so LIGHTLY STEAM ;)

I heard about it..they said they got more nutrients eating them raw than cooked..cos once you boiled them or cooked them, you lose the nutrients that they got..

But cooked tomatoes ( i know its a fruit!) are also very good for you, apparantly cooking changes one of the natural chemicals into a super antioxidant which is good to help fight the ageing process and cancer.

Yeap that way the Nutrients are not lost in the water and the fiber is not broken down.

Why in God's name would you eat vegetables, raw or otherwise, when there are so many tasty animals to chew on?

depends on The veggie. Fennel is better cooked but if you cook them in a soup you retain all the benefits as the liquid will kill the harmful chemicals that the farmers use to spray them with. Unless you eat more organic. That would be the best raw or steamed. Stir fried can also be good because it doesn't cook them fully.

Some nutrients can only be released with heat, others are destroyed with too much heat. Your best bet is gentle steaming.

I believe it is, but I wouldn't fancy eating every veg raw. Carrots are great raw, not bad cooked and awful steamed (in my opinion - they go quite sweet that way). Celery is better raw than cooked taste wise (I hate it any way, but I can just tolerate it raw), but I wouldn't fancy raw broccoli or anything.

Yes, the nutrients of really fresh veggies when consumed raw, are left in tact. When cleaned, peeled, cooked, and as they age, they lose nutrients that other wise could be consumed. Vitamins are lost thru heat contact and minerals lost into the water used to cook them with. A tip would be to save or recycle the cooking water, or as another user suggested, steam them for the shortest amount of time. Personally, even tho I know this, I still like cooked veggies better than raw...while I will eat some raw incorporated into salads, like sliced yellow or zucchini squashes, broc or calif flourets, etc. I really like them cooked! I do save a lot of the juices and pour them into a large container in the freezer reserved for making soups at a later time.

While vitamins are important, minerals tell vitamins what to do in the body. When you eat fresh veggies, you get the benefit of the vitamins, plants manufacture vitamins! But this is not necessarily so with the minerals...farms have cropped out the soils, and because minerals are not replenished in the soil, (flood control) cannot be in the foods grown there. We must supplement our minerals to get the minimum of what we require. I know this is a lot of info, that might be considered impertinent, unnecessary, trite, but, we are starving ourselves into obesecity. I have learned this and so much more on the internet...America should get wise to how nutrients work in the body...your Doctor sure does not want you to know...if you are well...his services will not be required.

And
You body only uses a fraction of the vitamins and minerals they contain..cooking also kills most of the bacteria etc.
And the notion of destroying is from the biased "health freaks" and extreme vegans..Old wives tales
All the posted nutritional numbers are based on recommended values,,,, NOT individuals requirements..

I believe so, however, I've heard that when you roast tomatoes you get more nutrients from them, than when you eat them raw. I love tomatoes, but I love them raw the best, not cooked, but to each their own.
