Why is it bad to store food in a can in the refrigerator?!
My mom told me to never open a can, use part of it and then put the unused part in the refrigerator while still in the can!.

she is referring to: botulism - an extremely severe type of food poisoning due to a neurotoxin (botulin) produced by Clostridium botulinum in improperly canned or preserved foods!. although modern cans do have lining it is still not a good idea to place anything in the fridge that isnt covered or sealed properly!.Www@FoodAQ@Com

I have heard that before from my mom as well!. I also just heard someone say it on food network - I wanna say Sandra Lee said it, she didn't say why though!. I imagine it's because it doesn't keep out any bacteria and might actually do the opposite and grow bacteria faster!. But I am not certain!.Www@FoodAQ@Com

depends upon the food!.!.!. but the concern is the air would start oxidizing the can (rusting) giving the food an off-flavor!.!.!. etc!.
However, if you just put a lid on the can or saran wrap!.!.!. most foods should keep in a can for a day or two!.
also, most cans have a thin plastic (or lacquer) lining nowadays!.
Some cans do not have the lining!.!.!. such as Pineapple!. The cans of pineapple I have appear to be metallic w/o the thin plastic coating on the inside!.Www@FoodAQ@Com

I always have done it (like 20 years) and never had a problem!. Why can't you store it in the can it originally came in!?!? Doesn't make sense to me!. If it's not good after you open it, then it wouldn't be good before you open it!. See what I mean!? I do use a clean saran wrap for a cover though , not the can cover!.!.!. also I have never ever seen rust so I doubt that happens!. I think they are treated not to rust!.Www@FoodAQ@Com

Don't store food in an opened tin can, or re-use empty cans to cook or store food!. This is because when a can has been opened and the food is open to the air, the tin may transfer more quickly to the can's contents!.
