Question: How do you fix homemade candy if you cool it before it's hot enough!?
if, say, hypothetically, i accidentally took the homemade mints that i was making off the stove before they reached the required heat (hardball stage) and started to cool them, and discovered that they won't set, what should i do!? should i put it back on the stove and heat it to the right temperature!? or should i just put them in the freezer to get them to cool!?Www@FoodAQ@Com

put them back on the heat source and bring temp to correct one! the crystals in the candy will be larger, but you can re cook it!.Www@FoodAQ@Com

sue is correct!. the finished product might be grainy but putting it into the freezer at this stage won't help harden the candy!. always use a candy thermometer, or the "cold water" test when making candies!.Www@FoodAQ@Com

Recook, or don't and call it what my mom used to--"spoon candy"!.!.!.because no matter how much you cool it, it will not harden to the right consistency but you can eat it with a spoon!. lolWww@FoodAQ@Com
