You should do a pig pickin and invite all the neighbors!. Those always go over great!. And they're easy because you can buy the pig pre-made!.

also, for dessert, I make this easy angel food cake dessert!. Slice the AFC into 3 rings and layer in the fruit mixture (20 oz can of crushed pineapple with juice, 1 cup cool whip, 1 package vanilla pudding mix, no milk)!. Then top with sliced strawberries!. It is excellent!. I make 1 cake for every 5 guests because they go so fast!. It's a great dessert after the heavy pork too!.Www@FoodAQ@Com

BBQ Beef Rib Bones
Wild Rice Picnic Salad
Sunshine Salad
& fresh sliced watermelon!

Barbecued Beef Rib Bones

Prep time: About 5 Minutes
Marinating time: About 2 hours
Grilling time: About 20-25 minutes

About 6 pounds meaty Beef Rib bones
Mustard Marinade (recipe follows)

Cut bones into singles, if not already!. Arrange bones in a large, shallow pan!. Prepare Mustard Marinade & pour over ribs; turn to coat!. Cover and let stand for about 2 hours!.

Lift bones from marinade and drain briefly (reserve marinade)!. Place on a lightly greased grill, 4 to 6 inches above a solid bed of hot coals or flame on gas grill!. Cook, turning & basting frequently with marinade until done to your liking (20-25 minutes for medium rare)!.

Mustard Marinade:
In a small bowl, combine 1/3 cup Dijon mustard and 2 tablespoons red wine vinegar!. Beating constantly with a wire whisk, add ? cup olive oil, a few drops at a time!. Then beat in 1 clove minced garlic, ? teaspoon each thyme leaves & Worcestershire, and ? teaspoon pepper!.

Best Ever Wild Rice Picnic Salad

1 Package Uncle Ben’s long grain & wild rice (cooked, as directed on package & then chilled)
? cup vegetable oil
2 tablespoons cider vinegar
? cup onion, finely chopped
1 cup celery, sliced
5 radishes, sliced
1 cup cucumber, diced

Combine oil & vinegar, stir into chilled rice!. Add onion & celery; mix well!. Chill!. Stir in radishes & cucumber before serving!.

Serves about 6

Sunshine Salad (from HPBooks, Cookery for Entertaining)

1 head romaine lettuce
2 heads red leaf lettuce
2 avocados, peeled & sliced
16 to 20 cherry (or grape) tomatoes
? red onion, thinly sliced & separated into rings
Sunshine Dressing (recipe follows)

Wash lettuce & shake off excess water!. Tear into bite-size pieces!. Wrap in paper towels, place in plastic bags & refrigerate overnight to crisp!. Prepare Sunshine Dressing!. Refrigerate until ready to use!.

To serve salad, put greens in a very large bowl!. Add onion, avocadoes, tomatoes & dressing!. Toss well!. Season with salt & pepper!. Makes 8-10 servings

Sunshine Dressing:
1 cup cider
1 cup vegetable oil
? cup honey
2 teaspoons poppy seeds

Mix all ingredients in a small bowl, in a blender or in a tightly covered jar until blended!. May be refrigerated up to 1 week!. Makes 1 & ? cups!.

Variation:
Substitute 1 (8-oz!.) can mandarin oranges, drained & 1 (16-oz!.) can grapefruit section, drained, for the tomatoes!.
